Recipes for a healthy spring and summer! (that kids can make for themselves)

Great activities for weekends, evenings or summer break. 

Baking and cooking are excellent lifelong skills that kids can build from a young age. Teaching your kiddos how to make simple things like the recipes below, and letting them make them for themselves regularly, will help instill independence and creativity. Knowing how to make a few dishes can go a long way, especially when your kids head off to college and beyond. Most important of all - cooking, especially when using healthy, fresh ingredients, is just plain FUN!

Here are some great recipes that your kids can make with you and eventually learn to make all on their own. They’re excellent “staple” recipes. Many of the ingredients can easily be moved around, added to, swapped out and replaced with other tasty goodness, to create a similar, but just different enough to keep it from getting boring, creation.

Banana roll up with dried fruit and honey

1 Medium whole wheat tortilla
2 Tbsp. peanut butter
1 banana
Dried fruit of your choice
1Tbsp honey

Spread the peanut butter on the tortilla so that it covers it completely on the side that’s facing up. Cut the banana into thin slices and place them on the tortilla, scattered around evenly.

Sprinkle the dried fruit all over the tortilla. Drizzle on the honey. Roll up gently. Cut in half, or in small sections.

If you want to make it SUPER yumtastic, heat up a skillet with a little coconut oil and warm the roll up before cutting it. It makes the outside nice and crispy and the inside warm and gooey! NUM!

Mix it up!

If you want to add some CRUNCH add some nuts like sunflower seeds, cashews or almonds or granola.

If you want to replace the peanut butter, try using Nutella or a different type of nut butter.

Bagel Pizzas

Preheat oven to 375 degrees
1 bagel - cut in half
½ cup mozzarella cheese
Pizza sauce
Your choice of toppings
Lightly toast your bagel.
Spread the pizza sauce on both halves of the bagel.
Sprinkle the cheese on the sauce.
Add your toppings
Place the pizza bagel on a pizza pan and place in the oven or toaster oven.
Cook for 7-8 minutes, or until the cheese is melted completely.

Mix it up!

You can try cheese bagel pizzas, veggie bagel pizzas with lots of peppers, onions and mushrooms, or a protein bagel pizza. Also, you can replace the pizza sauce with a cauliflower alfredo sauce or olive oil and garlic.

Frozen Orange Pops with Strawberries

1 carton orange juice with pulp
6 Popsicle molds
1 container Fresh Strawberries
Dice or slice strawberries into small pieces
Pour orange juice into popsicle molds
Add the strawberries

Mix it up!

Try using pineapple juice, mango juice or grape juice instead of orange juice.
Give raspberries a try or grapes, blackberries, blueberries or bananas!

Puffed Rice Snowballs

6 cups puffed rice cereal
1 bag all-natural marshmallows
6 Tbsp. plant based butter
Coconut (shredded or flakes)
Melt the butter in a large pan over medium low heat
Add marshmallows
Stir well
Mix in puffed rice cereal
Stir well
Spread out onto parchment paper
Make several snowball sized balls out of the mixture
Roll them in the coconut
Chow down!

Mix it up!

Add some small dark chocolate chips! Antioxidants and yumminess!
Add peanut butter with the marshmallows for added protein.

Rainbow Fruit Kabobs

1 carton strawberries
1 cantaloupe
4 bananas
1 bunch green grapes
1 carton blueberries
6 small plums
Clean the strawberries and cut off green tops
Cut up cantaloupe into 1 inch x 1 inch cubes
Cut bananas into large slices
Clean grapes and take them off of the bunch
Clean blueberries
Cut the plums into large slices
Place the fruit in rainbow order Red, Orange, Yellow, Green, Blue, Purple on your kabob skewer.

Mix it up!

Add some mozzarella cheese bites! Add some large marshmallows!
Drizzle with honey!

Peanut Butter Smoothie

1 small carton plain greek yogurt
2 Tbsp. peanut butter
1 frozen banana
Vanilla almond milk
Place everything in the blender and blend until smooth.
Add a metal straw and ENJOY!

Mix it up!

Add some fruit for a peanut butter and “jelly” smoothie
Pop in some granola for yummy crunch.
